Oven-roasted macambo: temperature, time and tips

For larger batches, the oven beats the pan: heat is distributed evenly, you stir less and can get on with other things. The keys are a low temperature, a single layer of seeds and a close eye on the right moment.
Ingredients & equipment
Step by step
1. Preheat. 140 °C fan or 150 °C conventional. Starting lower is safer – macambo burns quickly.
2. Spread evenly. Arrange the seeds in a single layer; no overlap, or they roast unevenly.
3. First round. Roast for 8 minutes, then remove the tray and turn the seeds.
4. Second round. Roast another 6–8 minutes. After 12–15 minutes they should be lightly browned and smell nutty.
5. Check. Cut one seed in half: warm and light inside, lightly browned outside. If too dark, take them out immediately.
6. Cool. Spread on a towel for 5 minutes, then rub off the thin skin if you like.
7. Use. Snack, chop into granola, grind into macambo powder or process into paste.
Oven vs pan
| Criteria | Oven | Pan |
|---|---|---|
| Batch size | 200–300 g+ | 50–100 g |
| Evenness | very even | good with constant stirring |
| Effort | low (turn twice) | medium (stir every 20–30 s) |
| Aroma | mild, even | more intense, faster |
| Time | 12–16 min | 5–8 min |
For small snack batches and a more intense aroma, use the pan-roasting recipe; for meal prep and larger batches, the oven wins.

FAQ
How long does macambo take in the oven?
12–16 minutes at 140–150 °C, turning once halfway.
Can I roast macambo at 180 °C?
Yes, but shorter (8–10 minutes) and watch it closely – the burning risk is higher.
Do I need to soak the seeds first?
