Honey macambo: a sweet snack idea with recipe

Roasted macambo and a touch of honey are a perfect match: the nutty flavour of white cacao meets a light, caramel-like sweetness. The result is a crunchy snack that is far more interesting than plain roasted nuts – and it takes just fifteen minutes.
Ingredients
Step by step
1. Pre-roast the macambo. Roast the macambo using the pan or oven method and use it while still warm – warm seeds absorb the honey better.
2. Warm the honey. Heat the honey in a large pan over low heat for 30–45 seconds until runny. Do not boil, or it turns bitter.
3. Toss the macambo. Add the warm macambo and stir gently for 1–2 minutes until every seed is evenly coated.
4. Season. Add salt and, if you like, cinnamon, chilli or orange zest, and fold briefly.
5. Dry. Spread on parchment paper so the seeds do not stick together. Cool for 10 minutes; the honey sets glassy and crunchy.
6. Store. Fill into a screw-top jar; keeps for about 2 weeks stored dry. Avoid humidity, which makes them soft.
